running

This week I started to train regularly. I finially overcame the winter tiredness and could wake up easily in the morning at six to go for a run with the sun. Today, the sun just came up as I left the house, it was magical. Unfrotunatelly I have to run on the sidewalk next to cars, but I know this routes very well so it makes it easier for me. On my way back I can meet my husband who waves me from the car :) (sometimes he even beeps :P to encourage me - so cute!) I really enjoy this morning runs - even that it is not easy - but give me such a good feeling for the rest of the day!

I kind of stopped going to the fitness studio (i go max. two times in a week), because I am not satisfied whith the place anymore, and I reached my big goal. Now I want to do sports what I enjoy. When my yearly contract end I will quit the studio and do the sports I want. We go out jogging or walking together in the evening or bike to the beach or have longer biketrips in the mountains on the weekend. My husband swims 3 times in the evenings (in a training group since his was 8), and he really wants me to come with him, but I couldnt really enjoy swimming training til now...and it exhausts me... who knows one day I will join him and we will do triathlons :P haha.

I sit the whole day infront of the computer and I am happy to do sports outside and not in a loud air-conditioned place. It is so much more fun to run outside and not on the threadmill! I prefare to rin in the mornings because the roads are empty, and it is more calm than in the evening. In our neighborhood there are a lot of walkers. It is so nice to see old people, couples and friends walking (as sport) a route and having fun all over the country here. I meet some joggers too, but not as many.

I am in the beggining of this journey, but now I have a big goal! We are signing up tonight for the Tel Aviv marathon Urban run - 10 km - race which takes place on the 8 of April 2011. I started a 12 weeks trainingplan.(I have a lil more than 12 weeks til the race) 6 weeks training for 5k and 6 weeks training for 10 k.
It is such a motivation!!!

questions of the day

- How can it be only 3 days until Christmas?

- Where did 2010 go?!?

The day after tomorrow we are flying to Vienna!! I am still at work and can't wait to start packing tonight! I'm dreaming of the smell of my family home, fun evenings with all my brothers and sisters, the snowy streets, good food, big talks, cool new year's eve at my best friends, hot tea and long walks.

Everybody, ready for christmas? Wish you an amazing joyful feast with friends and family and a safe trip home!

super foods

Oh my... since i figured out how to make it I can't imagine how I could live without almond butter!

It has a lot of fiber, calcium, vitamin E, and magnesium. Yes, it does has a lot of calories, but the protein gained mitigates the effect. How? High-protein foods add to satiety, and studies show that protein in a meal makes you feel more full - so, ultimately, you eat less. You'll also be doing your heart a favor by replacing the high level of saturated fat with the mostly monounsaturated fat in almond butter. For a change of pace, try the crunchy version of this spread.

It couldn't be more simple to prepare! Take 2 cups of roasted almonds, put them in the food processor for 15 minutes. Every now and then stop the food processor and scrape the sides of the bowl with a spatula. Process until completely smooth - it will become creamy (don't worry, but it takes time) add some sea salt and natural sweetener. (honey, stevia, maple syrup ... I used agave syrup)

I love it on top of hot oatmeal in the morning, or just like that on top of some fresh fruits or with homemade jam on a slice of bread or brioche. Enjoy!

organic gardening project on our rooftop

part of our rooftop now

Good morning to everyone!

I just started planning a big project of 2011: our rooftop garden.

We already have some plants from my husband and i grow a few spices (Basil, mint, stevia), but I want to start growing all kind of veggies this spring (unfortunatelly it is too late for berries - in Israel the strawberry season is right now). This is the perfect time to get all the infos, to plan and start in january- february.

I want to have an organic garden, which means we would use nothing but natural methods of bug control and natural, organic means of fertilizing the soil. This will not be easy! But we think if we plan a garden, we want to make it right! And it is well known that organic tastes better and is better for us.

our aloe plant

The first step will definitely be an organic composter. Since our garbage is already 70 percent vegetable and fruit scraps (lettuce, potato peels, banana peels, avocado skins, etc)it won't be so hard. We were thinking about that step for a while now and we will start with it after we are back from hungary.

I will keep you updated on the planning and the process! :)
Any experienced gardeners among you? What are your tips?

Double Broccoli Quinoa

picture from here

This is an amazing recipe from Heidi - who´s website is my favorite source of food inspiration. I just veganized and made her original recipe for the first time and it is amazing! This is my vegan version:

Ingredients (Serves 4 - 6):
2 cups quinoa
5 cups raw broccoli, cut into small pieces

1 big garlic clove
2/3 cup sliced or slivered almonds or sunflowerseeds (i took half-half) toasted
2 big pinches of sea salt
2 tablespoons fresh lemon juice
1/4 cup olive oil

Optional toppings: fresh basil, sliced avocado

1. cook the quinoa: rinse the quinoa in a fine-meshed strainer. In a medium saucepan heat a lil olove oil, add the quinoa, stir it and add two cups of water and a lil sea salt until boiling. Reduce heat and simmer until water is absorbed and quinoa fluffs up, about 15 minutes. Quinoa is done when you can see the curlique in each grain. Drain any extra water and set aside.

2. cook the broccoli: by pouring 3/4 cup water into a large pot and bringing it to a simmer. Add a big pinch of salt and stir in the broccoli. Cover and cook for a minute, just long enough to take the raw edge off. Transfer the broccoli to a strainer and run under cold water until it stops cooking. Set aside.

3. To make the broccoli pesto puree two cups of the cooked broccoli, the garlic, 1/2 cup of the almonds, sea salt, and lemon juice in a food processor. Drizzle in the olive oil and pulse until smooth.

Just before serving, toss the quinoa and remaining broccoli florets with about 1/2 of the broccoli pesto. Taste and adjust if needed, you might want to add more of the pesto a bit at a time, or you might want a bit more salt or an added squeeze of lemon juice. Turn out onto a serving platter and top with the remaining almonds and some sliced avocado.

I made the same dish with whole wheat pasta for my husband. He loved it!
Enjoy!

becoming vegan.

Picture from here. :)

Since ages i wanted to write about becoming to vegan and so many thoughts crossed my head but didnt take the time to put it all together... it is definetely a journey. i will let you take a look in the current stop i am.

I started this journey 3 month ago as I ate already very healthy and almost no meat but still was suffering from sneezing attacks every morning due to my allergies. I read a lot about the negative effect of diaries on mucus and i was thinking to give it a try to drop diaries. But let´s start whith the fact how i started to think about even becoming vegetarian?

I grew up in a family where we ate meet almost everyday, as I moved at the age of 19 to Germany and started to cook for myself. I ate meat once max. twice a week in avarage. We moved to Israel 1 year ago and in last january I started my health journey and my goal was to reach my dreamweight... I am still on this journey and lost 14 kilos til now and still counting. On this journey I learned so much about myself, my body and how food and excercise effects me.

I read countless articels, wrote a diet diarie, was counting colories, did sport every day and did my best to loose all the kilos in a healthy and longlasting way... since we live here I loved to go to the local library and everyweek I take new books. I recognised Jonathan Safran Foer and started to read his books. I loved them.

After I read his two romans, I couldn´t wait to get his new book Eating Animals. Reading this book was the point i had to realised how lil I knew and cared about the meat industry. I learned so much and it was no question for me that i don´t want to support this gross business any more.

It should be obvious that in order to eat meat, an animal had to be slaughtered, but we just get the meat in packages what doesnt remind us on where it comes from, no blood, no criing animals. Unfortunatelly the issues of cruelty go far beyond just the death of an animal. The lives of animals raised to be slaughtered are miserable. Often packed into close quarters, many animals are unable to lie down or turn around, and the hygiene is terrible. Many slaughter methods are imperfect and cause great suffering before death. You can learn about it IF you want. Sure it is easier not to think about it.

What shocked me the most was the brutality and waste of high-tech fishing methods. I could never think of canned tuna as a bad thing, but as soon as i read about the reality i couldn´t think eating it ever. So that´show I become vegetarian.

That week I read so much about what and how to eat, watched the movie Food Inc. and started a new life without meat... as I learned more about the effect of diary on the human body and how unhealthy cow milk is, I said, I will give it a try and stop eating diary products to see if my allergies will be better... it was not so hard as it sounds. I sure had to think twice and say no to a lot of things, but nbowdays you can find subtitutes for everything and still have the best foods at all: fruit, veggies and whole grains! After two weeks I already felt much better and stopped taking the medicines and didnt have to sneeze all the time... I am still sneezing sometimes but I live without the antihysthamins and feel much better.

What´s the deal with milk? Just think abouth this simple thing: Cow milk is for calves, baby cows - not baby humans, not adult humans
Humans are the only mammals on Earth that drink milk after they have been weaned off their mother, no other animal consumes milk from it's mother or from another animal past babyhood. The hormones and antibiotics fed to cattle which subsequently end up in milk have been linked to ovarian and breast cancers in women as well as atherosclerosis and heart disease in adults. Milk contaminated by the use of pesticides and insecticides has lead to concerns about asthma, intestinal bleeding, colic, ear and tonsillar infections and allergies. Read more on this topic here.

So this and more facts about the diary products lead me to stop eating them. and yes I am fine. I get all my calcium from green plants, veggies and fruits!

Now you might ask me what are you eating if you can´t have a pizza, cheese, yoghurt, icecream or chicken salad? As I stoped eating milk products I ate already a relativly healthy diet -lots of vegetable, salad, fruits- but only with Alicia Silverstone´s Kind diet I understood what my body needs and how important whole foods are. I learned all about nutritients and what my body really needs.

I plan good what I am going to eat on the next day, if I am going out to meet a friend and I always take my own cooked food, salad and fruits to work. A long time ago I don´t use any refinded sugar, white flour and processed foods. I cook 2-3 times a week and prepair some stuff like almond butter and tehina during the week. I don´t miss anything.

...lot of you might say and where do you get all the calcium? iron? b12?

Here are my main sources:

Iron: I eat everyday green leafy vegetables (kale, chineese cabbage, spinach) and tomatoes.

Vitamin-D: I get my vitamin-D by 15-20 minutes of daily sun exposure. I am thankful for the sunny weather in Israel!

Calcium: Almonds (self made almond butter), figs, sesame seeds, tehina(sesame paste), green leafy vegetables, broccoli and other plant foods, fortified plant milk.

(This mineral comes from the ground (not cow's milk, although it is present in most cow's milk, thanks to cattle feed supplementation, unless the cows are actually grass fed, which is highly unlikely if the milk you are drinking is the stuff from an average grocery store)

B-12: I take a supplement 3 times a week.

Omega-3: I eat every morning a tablespoon of ground flax seed, a small handful of walnuts during the day (in salad or alone).

Zinc: Pumpkin seeds, sunflower seeds, walnuts, wheat germ, wheat bran, yeasted whole-grain breads, sweet potatoes.

Protein: lentils, chickpeas, blacbeans, soybeans, peas, tofu, nuts, greens. It´s an old rumour that you can get your proteins only from meat and diary... Protein is found in all plant foods. Consider that most people need only 50-60 grams.

So you can see, as long as you're smart about it you can easily cover your nutritional bases on a plant-based diet. Sure it requires some more thought and planning into what you buy and eat but it makes me feel so much better.

You can ask me and what is with eggs and honey? So we bought some organic eggs a few weeks ago (they are so expensive)- so I had to finish them, but that was it. No more eggs for me.

I learned that chickens that provide eggs for consumption often spend their entire lives in a cage no bigger than a piece of notebook paper. Even organic is not garantee for anything. Anyway I never liked the taste of eggs and I ate only the whites, so I won´t miss it. I don´t use them in baking nayway (since 3 months) - I replace them with ground flax seed or plant oils. Honey we still have at home (my husband eats diary and all) but I use agave syrup when ever I would use honey. It is not only less calories but I need less and it tastes better for me.

What effect this change had on my life?
First I experienced a kind of lightness as I stoped eating diary, then I realised that my pms syndroms just disapeared completly: no cramps, no headache, no pain. Crazy! I was suffering from it since my first period every month and now it is gone. That was the first positive shock. The second, that my allergy got so much better. I am only sneezing now when I am cold, but if you consider that I don´t take a medicine, it is a big step forward. I am much more balanced.

I cook more. My husbands loves it and doesn´t even miss his meat. He is still eating meet when we eat (downstairs) at his parents or at a barbecue or at a restaurant when we go out, but we don´t buy any meet or fish. He eats his cheese and drinks his coffee, but already decreasing the amounts everyday... step by step (he actually used to be vegetarian for 3.5 years). I also try to buy organic from the things I can. This week we made a deal with my husband that I am going to buy all the veggies and fruits organic for the same amount we would buy in the grocery store and we will see what we get. Exciting!

That´s all for now. Let me know if you have any questions! I will be more than happy to answer!

super foods

Since the `becoming vegan´ post is still in the oven I want to start new series with my favorite foods. Every week i will post a tasty, nutritiant and yummie food what i love. Let´s start with my favorite: the sweet potato!

Baked, roasted, or mashed, sweet potatoes offer all the comfort-food satisfaction of white potatoes - but with much more nutrition. One medium sweet potato delivers more than a day's worth of vitamin A (in the form of beta-carotene), plus 57 percent more fiber and 55 percent more vitamin C than white potatoes. Rich and moist, they taste great - even alone.

They make the most boring salad to an amazing dish! I love them as they are steamed for a few miutes and with tehina. The best food ever!

Mount Carmel goes black :(

Spooning Squirrels ♥ (via daily squee) from Mark Loper

It is a very sad weekend... we are witnessing one of the biggest nature catastrophes in the history of Israel. A picturesque area the Carmel Mountain is burning. Probably you saw or read about it in the news. It is a huge catastrophe for this small country. At present, it is estimated that repairing the ecological damage caused by the fire in the region will take many years. There are no words to express how we feel.

Today morning I went to the whole foods market and had time to check all the foods of the superhero recipes. As I approched the vegatables a lady asked me if i want a free make up from new organic make up brand from australia... i really was not in the mood to wear any make up (which I usually don´t) and turned her down. After I went to buy some soap- this time I took the one with Goat milk and it turned out to be a great choice- and found a sale of my favorite israeli natural shampoos so i took two ;) one with coconut and one with pomegranate. The make up lady convinced me to get a make up too... but i must say, i know why i dont wear make up at all (max my rouge and from time to time mascara)... even it was organic the powder and foundation felt so unnatural, it is nothing for me! i feel free to show my real me not wearing a mask... on the way back home i removed 80 percent of the stuff and my love still recognized it on me ...he loves me completly without make up... :)

we had a very calm day, I prepared this amazing and very simple dish and playes with the cutest lil niece. Now my husband is playing the guitar and we are going to watch a movie.... have a great weekend!
